Let’s get started.
What is Kefir?
Kefir is a fermented milk drink similar to yogurt that is made from kefir grains, a specific type of mesophilic symbiotic culture, and contains good bacteria and yeasts.
There are two types of kefir. One is Water Kefir, and the other, Milk Kefir.
The two types of kefir are made with different grains and have different bases. The milk kefir is made with milk kefir grains with a base of milk. The water kefir is made with water kefir grains with a base of water and sugar.
In a nutshell, the grains are placed in their respective ‘bases’ and they ‘ferment’ or ‘digest’ the milk or water and sugar to create a nutritious beverage, cultivating vitamins and strains of good bacteria in the process. The end result is a slew of beneficial effects for the gut and overall health (Get Fit KL).
What is Milk Kefir?
Milk Kefir is a traditional fermented drink made by adding kefir grains to milk. It can be any kind of milk, cow, goat or sheep’s, or even non-dairy sources of milk, like coconut or almond milk. Kefir grains are not actually grains, but rather a colony of yeast and lactic acid bacteria.
These grains ferment the milk over 24 hours. During the fermentation process, the grains feed on the sugars in the milk. The end result is milk kefir. The grains can be strained from the liquid and reused to create another batch of milk kefir.
To sum things up, milk kefir is the drink, and milk kefir grains are the starter culture used to make the beverage.

It is made by fermenting sugar water with water kefir grains. Just like milk kefir grains, water kefir grains aren’t actual grains, but rather a cluster of yeast and bacteria living symbiotically. Water kefir grains look like little jelly crystals.
They have many names; tibicos, Japanese water crystals, California bees and more. No two cultures are exactly the same because of the variations of yeasts and bacteria in every environment.
